I know that some of you might be waiting for a new post cause for the past few weeks I'm not writing anything.

I know how it feels to look at a blog without any new posts, heehee!!!

But don't worry, I didn't forget my blog. I'm just a lil' busy, I mean who's not these days. :p

Just give me a few more days and you'll be reading a new post.

HONEY PEPPER CHICKEN STRIPS

I like to prepare these honey pepper chicken strips when I am the in mood for something that is both sweet and spicy. The honey pepper sauce gets most of its heat from black pepper. If you do not want to bread the chicken, you could brush this sauce onto the chicken strips like a BBQ sauce while grilling or baking them in the oven. You will want to time the cooking of the sauce with the cooking of the chicken strips. If the sauce cools down too much, it will become very thick and hard to toss the cooked chicken strips in. These chicken strips make a perfect dinner or are perfect to serve for the upcoming Super Bowl. Enjoy!!!

INGREDIENTS:

Honey Pepper Sauce-

  • ¾ cup honey
  • 1/3 cup soy sauce
  • ¼ cup dark brown sugar
  • ¼ cup pineapple juice
  • juice of 1 lemon
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon ground black pepper
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
Chicken Strips-

  • 2lbs boneless skinless chicken breasts (cut into strips)
  • 2 ¾ cups all purpose flour
  • 1 teaspoon salt
  • black pepper (to taste)
  • 1 cup buttermilk
  • Oil for frying

DIRECTIONS:

STEP 1 - In a medium sauce pan combine honey, soy sauce, brown sugar, pineapple juice, the juice of one lemon, apple cider vinegar, olive oil, ground black pepper, cayenne pepper, paprika, and garlic powder. 

STEP 2 - Bring to a boil while stirring occasionally. Reduce heat and simmer uncovered for 15 minutes or until syrupy while stirring occasionally.

STEP 3 - Meanwhile, in a pie dish combine flour, salt and pepper and Set aside

STEP 4 - Place the buttermilk into a separate bowl. 

STEP 5 - Heat oil in a deep fryer to 375 degrees. 

STEP 6 - Dip chicken strips first into the flour mixture, then into the buttermilk, and then again in the flour mixture. Repeat until all chicken strips are well coated.

STEP 7 - Place into a deep fryer and deep fry the chicken strips in batches, until golden brown and fully cooked. 

STEP 8 - Drain on paper towels. Toss chicken strips with the honey-pepper sauce and serve immediately.
